Jalfrezi - meaning 'hot fry' - is an Indian version of a stir-fry that is believed to have originated around the early 19th Century. It is said that Jalfrezi came to be when people in India began currying leftover cold meats with onions and chillies. Hence, Jalfrezi curry sprang to life as a practical way to use up leftovers. The dish has since evolved to become a more sophisticated curry with a complex spice mix.

Spicy Bengali jalfrezi recipe
Our Indian curry kits are truly versatile and come tailored with whole spices for distinctive flavour. Follow the simple 3-step instruction inside this pack for a delicious, restaurant quality curry in just 10 minutes! The punchy and tangy flavours of tomatoes dance on the palate as you take the first taste of this curry. Followed by a beautifully balanced kick of heat and piquancy from chilli and rich layers of savoury-sweet comfort.
Bits to buy:
250g skinless, boneless chicken or paneer, seafood, vegetables
1/2 Red pepper (chunky dice)
1/2 Medium onion (chunky dice)
1 Medium tomato (chunky dice) from your cupboard:
1 Tbsp vegetable or olive oil
For extra heat, simply add the chilli
Preparation: Cut the meat, fish/seafood or vegetables into generous pieces. If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively, if you left the spices whole, remove them with a spoon before serving.
1. Heat 1 tbsp oil in a small pan, add the spices and cook for 20 seconds, then add the diced onion and cook for a minute.
2. Add the meat or vegetables and brown lightly before adding the base sauce. Simmer for 1-2 minutes.
3. Add the diced pepper and diced tomatoes, then stir in the main sauce and fish/seafood (if using). Add 2 tbsp water if required and simmer for another 3-5 minutes or until the meat or other protein is cooked through. Serves 2-3 with naans, rice or parathas. As appliances may vary, these are guidelines only.

Use these handy tips to customise your dish:
- Fry (pierced) whole green chillies or julienned ginger in the oil before you add the base sauce for extra zing and flavour.
- Try it with paneer, mushrooms and lentils.
- Marinate skinned chicken thighs in the base sauce, grill for 8 minutes until charred, shred or chop up and finish off in the main sauce for a great smoky flavour.
- Add fresh chopped coriander before serving.
