Recipes
Bits to buy:
For a quick cook - 275g lamb or beef rump, steaks or strips
For a slower cook - 275g leg of lamb, mince, goat or oxtail etc.
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli
Recipe
Preparation: cut the meat into generous pieces.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively, if left whole remove them with a spoon before serving.
1. Heat 1 tsp of oil in a pan, add spices and cook for 20 seconds
2. Add the meat, brown lightly for 2-3 minutes, add the base sauce and simmer for 2 minutes
3. Stir in the main sauce and simmer for 3-5 minutes or until the meat is cooked through (1-1 1/4 hours for shoulder and leg and 30-35 minutes for mince)
Serves 2-3 with The Spice Tailor Naans, pilaf, parathas or roti
