Recipes

A piece of (cup) cake
Fluffy sponge meets rich vanilla
Ingredients (Makes 12 cupcakes)
For the cake
150g Unsalted butter (softened)
150g Silver Spoon caster sugar
3 Beaten eggs
150g Self raising flour
1 1/2 Tsp vanilla extract
For the buttercream
125g Unsalted butter (softened)
250g Silver Spoon icing sugar
1 1/2 Tsp vanilla extract
1/2 Tbsp milk

Let's bake
1. Preheat the oven to 180°C/160°C fan/gas mark 4 and line a 12-hole muffin tin with cases.
2. Mix butter and sugar together until pale and fluffy. Add the eggs, mix, then add the vanilla extract.
3. Fold in the flour, then divide between the cases.
4. Bake in the oven for 18-20 minutes until risen and golden. Leave to cool.
5. To make the buttercream, beat the softened butter, vanilla and half the icing sugar until smooth. Add in the remaining icing sugar and milk then mix until soft and fluffy.
6. Ready to decorate? Use a piping bag to pipe swirls onto the cupcakes.
