Raspberry Mojito Mocktail

100ml Lime Juice
100g Raspberries
80g granulated sugar
800ml Boiling Water
8 Fresh Mint Leaves

Mix the lime juice and raspberries together using a hand blender.
In a separate jug pour boiling water over the sugar and stir to dissolve. Add to the lime and raspberry mix along with the mint leaves. Leave in the fridge for at least an hour to chill.
Strain the mix through a sieve before serving to remove the raspberry pips and mint leaves.
Once the mix is well chilled pour into a glass over ice and add some mint to decorate.
