Rhubarb Crumble
550g Rhubarb
75g Unsalted Butter
50g demerara sugar + 3 tbsp for sprinkling
3 Tbsp Water
125g Plain Flour
Cut the rhubarb into 5cm chunks and place in a shallow baking dish.
Sprinkle with 3 tbsp of both sugar and water.
Place the butter, flour and sugar in a mixing bowl and rub together with your fingertips until it resembles coarse crumbs.
Spoon onto the rhubarb and bake for 35-45 mins at 190˚℃ (fan 170°C/gas mark 5) until golden brown.
