Our Favourite Recipe
Middle Eastern Meadow Soup by Ghillie Basan
Serves 4-6, you'll need:
1 tbsp butter, or olive oil
1 large onion, finely chopped
75g long or medium grain rice, well rinsed
2 handfuls fresh spinach, kale, chard or beet leaves, finely shredded
1 litre well-seasoned chicken stock
1-2 tablespoons finely chopped fresh mint, + 1-2 tsp dried mint
1 tub Rora dairy yogurt
Sea salt and freshly ground black pepper

Method:
Heat the butter or oil in a heavy-based pan.
Stir in the onion for 2-3 minutes to soften then toss in the rice. Pour in the stock and bring it to the boil.

Reduce the heat, stir in the shredded greens and both the fresh and dried mints, and simmer gently for about 20 minutes, until the rice is cooked.

Gradually, add the Rora Dairy tub to the soup, stirring vigorously to make sure it remains smooth and creamy. Keep simmering the soup over a low heat, until it is heated through once more, but don't bring it to the boil.

Season well with salt & pepper to taste and garnish the soup with mint. Serve immediately with chunks of warm, crusty bread.
