Preparation And Usage

6 Richmond frozen skinless sausages
2 thin courgettes or 1 big one, cut into 12 chunks
1 red pepper cut into 18 chunks
12 whole cherry tomatoes
6 wooden skewers and some oil for brushing
1. Turn the oven to 200°C/180°C Fan/Gas 6 and bake the sausages for 15 minutes (this will part cook them enough to be placed on a skewer).
2. Remove sausages from oven and cool for 3-5 minutes until they can be handled.
3. Cut each sausage into 4 pieces then wash your hands before continuing.
4. Each skewer will need 4 sausage pieces, 2 tomatoes, 2 chunks of courgette and 3 pieces of pepper.
5. Push the wooden sticks through the cherry tomatoes, peppers, courgettes and pieces of sausage in any order, making sure the pointy end is facing away from you.
6. Brush your skewers with oil and put in a baking dish returning to the oven for 15-20 minutes or until the veg are soft and the sausage browned.
