Recipes
You will need:
500g/1lb irish brown soda bread mix
350-400ml/12-14fl oz of cold milk
Flat baking sheet or 18cm/7" round cake tin
Method:
1. Preheat oven to 200°C/180°C fan/400°F/Gas mark 6.
2. Weigh out 500g/1lb of bread soda mix and put into a bowl.
3. Add sufficient milk and mix to form a soft dough.
4. Knead the dough a little on a floured surface and turn the smooth side up.
5. Cut a cross over the top and place in a floured 18cm/7" cake tin or on a floured baking sheet.
6. Bake for approximately 40 minutes.
7. When baked the bread will have a hollow sound if tapped on the base.
8. Cool on a wire tray. A tea towel wrapped over the bread at this stage helps to give a softer crust.
Note: As baking characteristics of ovens vary, always check your manufacturer's guidelines.
Top tip: Milk other than cow's milk can be used but may produce lighter crust when baked.
