Roasted Vegetable & Olive Pasta

Shopping List
- 300g of Napolina Conchiglie Pasta
- 1 red pepper de-seeded and roughly chopped
- Yellow pepper, de-seeded and roughly chopped
- 1 red onion, chopped
- 2 cloves of garlic, chopped
- 2 courgettes, roughly chopped
- 4 tbsp Napolina Olive Oil
- 50g olives
- 4tbsp of Pesto
- Handful of fresh Basil leaves, torn
- Squeeze of lemon juice
- Parmesan shavings to serve
How to Make
#1 Pre-heat the oven to 200°C/gas mark 6. Cook the pasta in slightly salted boiling water for 13-15 minutes or until al dente.
#2 Mix the peppers, onion, garlic and courgette together, toss in the olive oil.
#3 Roast the vegetables on a shallow baking tray for 15-20 minutes.
#4 Drain the pasta, mix with the roasted vegetables, olives, pesto and basil leaves. Serve topped with the parmesan shavings.
