Pinto Bean Madras
Prep Time: 15 minutes
Cooking Time: 2 hours
Serves: 4
Ingredients:
250g pinto beans. 1 tbsp olive oil.
1 medium onion, finely chopped.
1 garlic clove, crushed. 4 tbsp
Morrisons madras curry paste.
200g potatoes, peeled and roughly chopped. 600ml vegetable stock.
2 x 400g cans chopped tomatoes.
200g spinach leaves. Salt and black pepper.
Method:
1. Cook the pinto beans to the on pack instructions, then drain and set aside until required.
2. Heat the oil in a large saucepan over a low heat, fry the onion and garlic until soft. Add the curry paste, potatoes and vegetable stock. Bring to the boil and simmer for 10 minutes.
3. Stir in the chopped tomatoes and cooked pinto beans, bring back to the boil and then simmer for a further 15 minutes until the majority of the liquid has been absorbed and the potatoes are cooked through.
4. Stir in the spinach and season lightly, cook for 2 minutes and serve immediately.
To Serve:
Delicious with rice, naan bread and a selection of your favourite Indian pickles.

Bring to the boil and boil for 10 minutes. Reduce the heat to low and simmer for 60 minutes, until the beans have softened but are slightly firm to the bite. Drain thoroughly, rinse and use as required.
