Lentil Shepherd's Pie
Prep Time: 20 minutes
Cooking Time: 1 hour 30 minutes
Serves: 4-6
Ingredients:
1 tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, crushed
2 medium carrots, diced
100g swede, diced
250g green lentils
1 x 400g can chopped tomatoes
500ml vegetable stock
1 tsp dried thyme
Salt and black pepper
800g potatoes, diced and rinsed
2 litres water
25ml semi-skimmed milk
Knob of unsalted butter
Method:
1. Heat the oil in a medium saucepan over a medium heat, add the onion and cook for 2 minutes.
2. Add the garlic, carrots and swede, cook for 5 minutes.
3. Add the lentils, chopped tomatoes, vegetable stock, thyme and season lightly. Bring to the boil and then reduce the heat to low and simmer for 30 minutes.
4. Place the potatoes and the water in a large saucepan. Cook over a high heat until the water boils and then reduce the heat to low and cook for 20 minutes.
5. Drain the potatoes and mash with the milk and butter until smooth.
6. Pre-heat oven to 200ºC (fan 180ºC), Gas Mark 6.
7. Spoon the cooked lentil mix into a large ovenproof dish and top with the mashed potato.
8. Bake in the centre of the pre-heated oven for 30 minutes.
To Serve:
Great served with your favourite steamed vegetables.
