Roast Mediterranean Vegetable Couscous
Prep time: 15 minutes
Cooking time: 30 minutes
Serve: 4
Ingredients:
120g couscous
1 small red onion, diced
1 medium courgette, diced
1 large yellow pepper, deseeded and diced
1 small aubergine, diced
100g cherry tomatoes
1 tbsp olive oil
4 tbsp sundried tomato paste
Salt and black pepper
1 tbsp fresh basil, finely diced
Method:
1. Cook the couscous to the on pack instructions, then drain and set aside until required.
2. Pre-heat oven to 200°C/400°F/Gas Mark 6.
3. Add the red onion, courgette, pepper, aubergine, cherry tomatoes, oil and 2 tablespoons of the sundried tomato paste in a large bowl and season lightly. Mix until the vegetables are well coated in the oil and then spread out evenly in a roasting dish.
4. Roast in the centre of the pre-heated oven for 20 minutes.
5. Stir the roasted vegetables, basil and the remaining sundried tomato paste into the couscous and serve warm.
To Serve:
Great as an accompaniment to grilled lamb or vegetable kebabs.

Stir, cover with a lid, reduce the heat to low and simmer for 5 minutes until most of the water has been absorbed. Remove from the heat, drain off any excess water and stand for 10 minutes. Separate the grains with a fork and use as required.
