Chicken, Chorizo & Butter Bean Casserole
Prep Time: 10 minutes
Soaking time: 12 hours or overnight
Cooking Time: 1 hour 20 minutes
Serves: 4
Ingredients:
300g butter beans
2 tbsp olive oil
8 chicken thighs, skinless
1 medium red onion, finely chopped
1 garlic clove, crushed
200g chorizo, thickly sliced
450ml chicken stock
1 tsp dried mixed herbs
1 x 400g can chopped tomatoes
2 medium carrots, finely chopped
Method:
1. Soak the butter beans to the on pack instructions, then drain and set aside until required.
2. Heat 1 tablespoon of the olive oil in a large heavy-bottomed saucepan over a low heat. Fry the chicken thighs for 5 minutes on each side until browned, then remove from the pan and set aside. You may have to do this in batches, depending on the size of your pan.
3. Add the remaining oil to the pan with the onions and garlic, fry gently for 5 minutes until the onions are translucent. Add the chorizo and fry for a further 5 minutes.
4. Stir in the stock, mixed herbs and tomatoes. Increase the heat to medium and bring to the boil.
5. Add the carrots, pre-soaked butter beans and the chicken thighs. Reduce the heat to low and simmer gently for 1 hour until the chicken is cooked through and the butter beans are soft.
To Serve: Serve in generous portions with steamed green vegetables.

Soak 100g beans in 500ml cold water for 12 hours of overnight. Drain and rinse thoroughly. Place the soaked beans into a large saucepan with 500ml of water. Place the pan on the medium hob ring over a high heat. Bring to the boil and boil for 10 minutes.
Reduce the heat to low and simmer for 40 minutes, until the beans have softened but are slightly firm to the bite. Drain thoroughly, rinse and use as required.
