Vinification Details
Grapes destemmed and crushed after a brief cool maceration, full fermentation starts running at 29 ° C for 7 days at pump over for colour extraction. The alcoholic fermentation is followed by natural malolactic fermentation, after separation from the grape solids. A portion of the blend is aged in French oak barrels for 10 months. The wine is chilled for tartrate stabilisation and the finished product is ready to bottled after final filtration.
