The winemakers in the Chablis region have had to resort to some pretty drastic measures over the years. Being in northern France, it can get a bit nippy out in the vineyards, something the delicate buds are not keen on. Whole vintages can be rendered useless in next to no time. Somehow the winemakers have worked out how to avoid this and now mist their vines with water. As it freezes it forms a protective bubble around its precious cargo and Chablis lovers everywhere breathe out a huge sigh of relief and anticipation.
