Recipe suggestion: Christmas cake recipe:
Equipment: 20cm, deep loose bottomed round cake tin, greased with butter. Baking parchment. Aluminium foil.
Ingredients:
1 Packet (800g) brandy soaked mixed fruit
160g soft brown sugar
160g plain flour
160g unsalted butter, at room temperature
3 medium eggs, at room temperature
50g blanched almonds, chopped
5g mixed spice
5g baking powder
3g salt
Orange, finely zested & 1 tbsp of juice
Method:
1. Preheat the oven to 150°C/Fan 130°C/Gas Mark 2.
2. Line the base and sides of the tin with a double layer of baking parchment.
3. Make a lid out of another double layer of baking paper by cutting a circle slightly larger than the diameter of the cake tin, snip around the edges to allow it to sit inside the tin.
4. Cut a 20p sized hole in the centre to allow steam to escape during baking.
5. Beat together the softened butter and brown sugar until light and fluffy.
6. Add the eggs one at a time and then fold in the flour, mixed spice, baking powder and salt.
7. Gently stir in the orange zest and 1 tbsp juice.
8. Fold in the brandy soaked fruit mix and the chopped almonds
9. Spoon the mixture into the tin, smooth the surface level and then make a well in the centre of the cake batter. Cover with the baking parchment lid.
10. Bake in the centre of the preheated oven for 2-2 1/2 hours. Check the cake after 2 hours to see if it is fully baked. You can do this by inserting a skewer into the centre of the cake - if the skewer comes out clean it is fully baked, if it does not, return the cake to the oven and continue cooking until the skewer comes out clean when re-tested.
11. Leave the cake to cool in the tin for 1 hour. Then remove from the tin and place on a wire rack to cool completely.
12. Wrap in a double layer of foil and store in a cool dark place until required. For an extra indulgent cake, you can feed your cake with 1-2 tablespoon of brandy, whisky or rum every fortnight until it is ready to be iced.
