Vinification Details

The vines, which are an average of 25 years old are machine harvested at the end of September, beginning of October. Fermentation takes place at an average temperature of 20-30°C for 15 to 20 days in stainless steel tanks. We have not used any oak to focus on a modern, fruit-forward profile.
