Cooking Guidelines

Pre-heat your oven to 240ºC or Fan 220ºC, Gas 9. Pre-heat a baking tray in the oven. Remove the wellington and greaseproof paper from the tray. For best results: Glaze the wellington with a beaten egg yolk and create 4 small vent holes in the top and another 4 small vent holes two on each side. Place the wellington on the greaseproof paper on the preheated baking tray. For medium cook: Place in the oven on the top shelf and bake for 15 minutes. Reduce oven temperature to 200°C /180°C Fan and bake for a further 25 minutes. For well done add an additional 15 minutes to the final stage of cooking. Once cooked, rest for 10 minutes prior to serving. Chef's recommendation is medium.
