Ingredients: 2 x chicken breasts, 1 x 85g packet of Morrison's sage and onion stuffing mix, 4 rashers of rindless smoked back bacon, olive oil, ground black pepper.
Method:
Pre-heat your oven to 200°C/400°F/Gas Mark 6. Cut a slit into the side of each breast and lightly grease with olive oil. Make up the sage and onion stuffing mix as per the packet instructions and fill the chicken with the stuffing mix. Drizzle with a little olive oil and season with the ground black pepper. Roll each of the chicken breasts with 2 rashers of the rindless smoked back bacon. Place each rolled chicken breast into a baking tray and place into the oven for 25 minutes.
