How to cook
Steak and Ale Pie

Ingredients:
700g braising steak
2 tablespoons sunflower oil
500g shallots, peeled
250g button mushrooms
2 tablespoons plain flour
2 tablespoons Worcestershire sauce
2 tablespoons tomato purée
500ml real ale
400ml beef stock
1 tablespoon demerara sugar
Salt and freshly ground black pepper
425g block puff pastry
1 egg

Method:
1. Cut the braising steak into bite-sized cubes. Heat the oil in a large flameproof casserole dish and fry the meat until evenly browned all over. Add the shallots and mushrooms to the pan and cook for a further 5 minutes, stirring.
2. Sprinkle with the flour and stir well. Cook for 2 minutes.
3. Mix together the Worcestershire sauce, tomato purée, ale, stock and sugar and pour over beef. Season to taste. Bring to the boil, stirring, and cook on a high heat for 5 minutes. Reduce heat and cook, covered, for 1 hour 15 minutes, stirring occasionally. Remove the lid for the final 15 minutes of cooking time.
4. Remove the puff pastry from the fridge 20 minutes before required. Preheat the oven to 200°C/400°F/Gas 6. Divide the beef mixture between 6 individual pudding dishes with a rim. Roll out the pastry on a lightly floured surface and cut out 6 lids just slightly larger than the pudding dishes.
5. Re-roll the trimmings and cut into strips. Beat the egg with a little water and brush over the rims of the dishes, press thin strips of pastry around the rims then lift a pastry lid on top, pressing down well to seal. Use any trimmings to cut out pastry leaves to decorate each pie and brush with beaten egg. Make two small slits in the top of each pie to allow steam to escape. Bake for 35-40 minutes until pastry is golden and puffed up.

Oven cook - From Chilled. Cooking appliances vary. These instructions are given as a guide. Please ensure that the product is piping hot throughout before serving.
If product is frozen, defrost thoroughly and cook as chilled.
Pre-heat your oven to 220°C/Fan 200°C/Gas Mark 6. Remove pastry from the fridge 20 minutes before use. Remove all packaging. Roll out the pastry whilst still cool to your required thickness (suggested 3-5mm) on a lightly floured surface. After rolling out, allow to rest for a few minutes before using. Cut to required size, or as stated in your recipe. Place pastry on baking paper on a baking tray in the centre of the oven. Cook for 10-15 minutes.
