Our mackerel are caught in the cold waters of the North Atlantic during the prime winter season, when quality is premium. The mackerel are hand filleted, sweetcured using demerara sugar and slowly smoked using beechwood to enhance the natural succulent flavour. The finished product has a delicate sweet and smoky flavour combining perfectly with the natural oil richness of mackerel.
