Roast salad potatoes with garlic and thyme: These skin on roast potatoes are a lighter alternative to traditional roasties.
Ingredients: 1kg salad potatoes, 2 tablespoons olive oil, 2 garlic cloves, roughly chopped 4 sprigs thyme (leaves only).
Method:
1. Pre-heat your oven to 200°C/180°C Fan/Gas Mark 6.
2. Cook potatoes in a large pan of boiling water with lid on for 15-18 minutes or until softened. Add salt if desired.
3. Drain potatoes and transfer to a roasting tin. Using the
back of a wooden spoon gently crush the potatoes until
slightly flattened.
4. Drizzle the olive oil over potatoes. Season well and toss with garlic and thyme leaves.
5. Roast for 20-25 minutes or until crisp and golden.
Ensure product is piping hot throughout.

For roast potatoes: Adjust oven rack to the lowest position. Pre-heat your oven as shown. Pour 2-4 tablespoons sunflower oil into a roasting tin and place in oven. Either use whole or cut larger potatoes in half (adjust cooking times accordingly).
Put potatoes into the hot roasting tin, if halved place cut side down. Return to the oven and roast, turning potatoes occasionally until tender and golden.; Steam - From Ambient. 15-20 min
