Ramen Noodles in Broth
Serves 2
What you need
- 2 bundles of Ramen Noodles
- 350ml of Ramen Broth
- Handful of Beansprouts
- Handful of frozen Soybeans or Peas
- 1 Chicken Breast or 150g Tofu (cubed)
- 1 Pak Choi (end removed & halved)
- 1 Soft Boiled Egg
Optional for Finishing
- Drizzle of Sesame Oil, Soy Sauce and Sriracha Sauce
- Sprinkle of chopped Coriander and Spring Onions
Cooking instructions
1 Cook the noodles as per the instructions.
2 Fry off the chicken breast (if using). When it's completely cooked through, rest before slicing. Keep warm.
3 Pour the broth into a saucepan and bring to a boil. Add the beansprouts, soybean (and tofu), and bring back to the boil. Then lower the heat.
4 Cook the pak choi in boiling water until soft. Drain and keep aside.
5 Gently lower egg into boiling water for 5 minutes. Remove and place in cold water. Once cool enough to handle, peel shell, cut length-ways and set aside.
6 Start arranging the noodles into 2 bowls. Add pak choi and pour the broth over with the beansprouts, soybean (and tofu).
7 Arrange the egg yolk-side up on the top along with your slices of chicken (if using).
8 Finish with sesame oil, soy and sriracha sauce. Top with chopped coriander and spring onion. Serve piping hot.
