Recipes
Mexican Macaroni
Serves 5
For this recipe you will need:
400g Macaroni
150g Cheddar Cheese, grated
150g Spicy Cheese of your choice, crumbled
50g Smoked Cheese
2 tbsp Butter
3 tbsp Plain Flour
500ml Whole Milk
2 tsp Dried Chilli Flakes
4 Flour Tortillas, toasted
1. Pre-heat the oven to 200c.
2. Cook the Marshalls Macaroni according to the pack instructions.
3. Whilst that is cooking, melt the butter into a saucepan. Once completely melted, add in the flour and stir vigorously. Do this for 1 minute.
4. Gradually whisk in the milk until you get a smooth béchamel sauce.
5. Let this simmer for 5 minutes until it thickens.
6. Once thickened, add in all your cheese and cook over a low heat or about 3 minutes or until the cheese has all melted.
7. Toast your tortillas in a dry frying pan until golden brown on each side. Alternatively, you can place them on the wire rack of your oven and leave for 6-8 minutes.
8. Add chilli flakes and drained macaroni to your cheese sauce to heat through, stirring occasionally.
9. Once the tortillas have baked and cooled, break into pieces big enough to dunk into your macaroni.
10. Once the macaroni has heated through, serve with tortillas.

Hob - From Chilled. Place pasta in a saucepan of boiling water (1 litre of water per 100g pasta). Add salt to taste and boil for 8-10 minutes, stirring occasionally. The shorter cooking time results in a more "al dente" (firm) texture.
