Oven cook - From Chilled. Pre-heat oven to 220°C/425ºF/Gas mark 7.
Remove all packaging, including pad. Season. Place in a roasting tray. Cook on middle shelf for 30 minutes, reduce heat to 180°Cfor remainder of cooking time. Cooking times (including initial 20 minutes) rare - 20 minutes per 500g plus 20 minutes. Medium - 25 minutes per 500g plus 25 minutes.
Well done - 30 minutes per 500g plus 30 minutes. Remove from oven, cover with foil. Rest for 10 minutes.
