Medium; Season the meat, and place in a roasting tray and cook in the centre of a pre-heated oven for 25 minutes per 500g plus 25 minutes.
Well done; Extend cooking time until cooked to preference. Once cooked cover and keep warm, allow to rest for 15-20 minutes before carving. Cooking appliances vary. These instructions are given only as a guide.
