Recipes
Cornish Chunkies
Ingredients:
- 500g Jus-Rol™ shortcrust pastry block
- 1 large onion, finely chopped
- 1 medium potato, peeled & thinly sliced
- 150g parsnips, peeled & thinly sliced
- 2 tbsp chopped parsley
- 125g mature cheddar, grated
- A little flour
- 1 egg, beaten
Method:
1 Preheat the oven to 220°C (200°C fan oven) Gas Mark 7.
2 Mix the onion, potato, parsnip, parsley & grated cheese with 1/4 tsp salt & plenty of black pepper.
3 Cut the pastry into quarters then, roll each quarter to a 20cm round (you can use a plate or cake tin bottom to measure and trim).
Firmly pack 1/2 of the filling mixture along the centre of each round, leaving a border at each end.
4 Brush the pastry around the edge with egg.
Carefully lift up both sides so they meet at the top.
Pinch together to seal & gently lift onto a lightly floured baking tray. Brush with the last of the egg to glaze.
5 Bake the pasties for 10 minutes, then reduce the oven to 180°C (160°C Fan oven) Gas Mark 4 & cook for 45 minutes more or until golden brown.
Delicious served hot or cold.

2. Roll out the pastry while still cool to your required thickness, on a lightly floured surface. After rolling out, allow to stand for a few minutes before using.
3. Bake in a preheated oven at 200°C (180°C for fan assisted ovens)/Gas Mark 6, or at the temperature required in your recipe.
Room temperature = ready
Allowing your pastry to rest at room temperature before using makes it much more supple and less likely to crack or break when handling.
Why roll to £1 thick?
At this thickness pastry is thick enough to handle without cracking yet thin enough to cook thoroughly for a delicious golden bite every time.

Small black spots may be present in the pastry. This is bran which is naturally occurring within the flour and will disappear during cooking.
Get hands on
Remove your pastry from the fridge 20 minutes before use to make it easier to shape. When you're ready:
1. Pre-heat your oven to 200°C / 180°C (fan) / Gas Mark 6 and begin to prepare your other ingredients.
2. Roll the pastry while it's still cool, on a lightly floured surface to the thickness you need, leave to stand for a few minutes before adding your fillings or toppings.
3. Bake for 10-15 minutes, or as your recipe states. Heavier toppings, fillings, or thicker dough might need a little extra time.

Simply brush with egg wash and sprinkle on some sugar before baking... A sweet tasty win.
