Recipes
Ingredients
1 x 280g Jus-Rol Gluten Free Puff Pastry sheet
2 kiwi fruit, peeled and sliced
3 pineapple slices, cut into segments
1/2 papaya, peeled, sliced and chopped
1 tbsp blueberries
4 tbsp crème fraiche
1 lime, finely grated zest
Icing sugar to dust
Method
1 Preheat the oven to 220°C (200°C in a fan oven) / Gas mark 7.
2 Unroll the puff pastry on to a baking sheet, leave on the paper.
3 Cut out a petal shaped round about 20cm (8in). Remove the trimmings and using a knife mark an inner circle, 2 cm in from the edge.
4 Prick the centre pastry circle using a fork.
5 Bake in the preheated oven for 15-20 minutes, until well risen and golden brown.
6 Cool on a wire rack until cold. Cut round the centre circle and push down to flatten the centre.
7 Mix the crème fraiche and zest together, sweeten with a little icing sugar if desired.
8 Spread the crème fraiche over the pastry case and arrange the fruit on the top.
Dust with icing sugar if required.
