Vinification Details

Pressing is done in 4000kg or 8000kg presses, and after an initial settling of the must, fermentation takes place in stainless steel vats at controlled temperatures. Keeping the temperature around 20 degrees of less helps retain freshness and aroma, which is an important consideration for Champagne.
