Caribbean Style Rice & Peas
A popular Jamaican style dish; can be paired with beef or any other meat.
Ingredients
400 ml coconut milk
1 can red kidney beans, rinsed and drained
3 cups Island Sun Long grain rice, washed and drained
2 stalks scallions, rinsed with roots removed
2 sprigs thyme
2 1/2 cups low sodium chicken broth
Salt and pepper
1 scotch bonnet pepper
Method
In a pot, add the peas, then the coconut milk.
Add salt, pepper, thyme and whole scallions.
Cover and bring to a boil.
Add rice and broth. Gently stir.
Add the scotch bonnet pepper on the centre to the top of the rice.
Cover and allow to simmer on a medium low heat.
Cook for about 20-25 minutes until the rice is cooked.
Serve hot.

Preparation And Usage
Suggested Method of Cooking
For best results rinse the rice under warm running water until the water runs clear.
Add 60g to 75g per person of rice to the large pan of boiling water.
Add salt and /or butter (optional). Return to the boil and cook for 10 - 12 minutes or until soft.
Drain rice and steam, with the pan lid on, for 30 seconds. Fluff with a fork and serve
