Karahi Fry Gosht
Ingredients Required: Meat (Mutton, Chicken or Beef) small pieces, Quantity & Preparation: 1 1/2 kg
Ingredients Required: Tomatoes cut into quarters, Quantity & Preparation: 6-8 (500g)
Ingredients Required: Whole Green Chillies, Quantity & Preparation: 6-8 or to taste
Ingredients Required: Indus Ginger Paste, Quantity & Preparation: 3-4 tbsp (40g)
Ingredients Required: Indus Cooking Oil/Ghee, Quantity & Preparation: 1 1/2 - 2 cups (250g)
Ingredients Required: Indus Karahi Fry Spice Mix, Quantity & Preparation: 1 bag
Steps of Cooking
1. In a pan add meat, ginger paste, Indus Karahi Fry Spice Mix and 1-2 glasses of water. Cover & cook over a low/medium heat setting and cook until meat is tender. (Ensure when meat is tender there is at least one cup of sauce present).
2. In a separate pan fry tomatoes for 5-10 minutes in oil/ghee until half cooked.
3. Add cooked meat, whole green chillies to the fried tomato mix. Cover and cook over high heat setting for 5 minutes, turn heat setting to low and further cook for 10 minutes or until oil/ghee has separated.
4. Garnish with fresh coriander and serve.
Fry Meat
Require one Cup of yoghurt (150g)
1. In a pan add oil/ghee heat slightly. Add meat & Indus Karahi Fry Spice Mix now stir fry for 2-4 minutes.
2. Add yoghurt and tomatoes, cover and cook until meat is tender and oil/ghee has separated.
3. Add green chillies, cook for a further 5 minutes.
4. Garnish with fresh coriander and serve.
Balti Meat
Require 4 medium onions cut into quarters (250g)
5-6 tbsp of fresh or bottled lemon juice.
1. Add tomatoes, onion and green chillies. Cover and cook over low heat setting for 10-20 minutes or until oil/ghee has separated.
2. Add tomatoes, onion and green chillies. Cover and cook over low flame for 10-20 minutes or until oil/ghee is separated.
3. Add lemon juice garnish with fresh coriander and serve.
