Venison Grillsteaks
with Roasted Tomato and Herb Relish

Preheat oven to 180°C Fan/200°C/400°F/Gas 6. Halve 600g cherry tomatoes around their middles, then spread them over a roasting tin cut side up. Cut 3 small red onions into wedges and scatter on top of the tomatoes then drizzle with 3 tablespoons olive oil and sprinkle with 1 teaspoon mixed dried herbs and some black pepper. Roast in the oven for about 20 minutes.

While this is cooking, cook the grillsteaks according to one of the methods above. Cover and rest.

Add 20ml cider vinegar to the roasting tin, with 1 crushed garlic clove, 100g soft brown sugar, 1 chopped small fresh red chilli, and 1 tablespoon tomato purée. Mix well then bring to the boil and simmer for 15 minutes until thickened and chutney-like. Season with salt and pepper and serve with the grill steaks or pot into jars and refrigerate for up to 2 weeks.

Cooking Guidelines

Barbecue - From Chilled. Preheat the grill to medium, then cook for 6-7 minutes per side.; Cooking Instructions - General. Cook from chilled. Remove all packaging. Brush the grillsteaks with a little vegetable oil.
All appliances vary, these are guidelines only. Not suitable for microwave cooking. Ensure product is cooked thoroughly, is piping hot and there is no pink meat visible.; Grill - From Chilled. Preheat the grill to medium, then cook for 6-7 minutes per side.; Shallow Fry - From Chilled. Heat a heavy frying pan or gridle pan over a medium heat for 3 minutes. Fry the grillsteaks for 5 minutes per side, turning once. Loosely cover with kitchen foil and allow grillsteaks to rest for 5 minutes before serving for maximum tenderness.
