Preparation And Usage

Wipe clean only using a damp cloth.

Smoking Instructions
Dry Wood Chip Method: For a quick smoke empty approx. 75g of wood chips into the smoker and apply the lid. Place the smoker directly onto hot coals, gas
burner or on grill plate over gas flame.
Wet Wood Chip Method: If you're slow cooking the meat and looking for a longer smoke, try soaking the wood chips in water for 30 minutes beforehand. For an added twist, why not try soaking the wood chips in your favourite Guinness beer.
1. Drain off excess liquid and place approx. 75g of wood chips into the smoker. reapply the lid and place directly onto hot coals, gas burner or on a grill plate
over gas flame.
2. Close the lid of the barbecue allowing the smoke to develop slowly. Once ready, place the food on the grill and cook as usual. The smoke will engulf the meat, infusing it with the sumptuous, unique smoky flavour. Keep hood closed throughout cooking to retain smoke.
3. Remove the meat from the grill and place on a stable surface. Gently insert the tip of the thermometer probe into the centre of the meat/food, ensuring it does not make contact with bone or fat as this could affect the reading. Allow the temperature to gauge a few seconds to adjust to its final reading. Once you've reached the recommended internal temperature, remove the meat from the grill ready to serve.

Smoked Shredded Beef Buns
You will need: 2.5lb Beef Joint;
600ml Guinness Original;
8 tbsp good quality Barbecue Sauce
1. Mix half of the beef rub in a bowl with 600ml Guinness Original. Coat and rest the meat for 4 hours in the fridge, turning the Joint every hour to ensure coverage.
2. Remove the meat from the fridge and leave for 30 minutes at room temperature. Apply the remaining dry rub directly to the surface of the meat.
3. Follow your chosen smoking preparations. Cook on the grill until the meat starts to shred away from the bones when using a fork.
4. When cooked, remove from the grill, shred the meat and mix in the barbecue sauce. Serve in a bun with accompaniments.
Enjoy with a glass of Guinness Original.

Guinness Smoked Baby Back Ribs
You will need:
1 x Rack of spare ribs (600g);
250ml Guinness Original;
6 tbsp good quality Barbecue Sauce
1. In a bowl, mix together the BBQ Pork Rub and 250ml Guinness Original until well combined.
2. Coat your rack of ribs with the prepared marinade and leave to rest in the fridge from 2-24 hours.
3. Follow your chosen smoking preparations. Cook on the grill until the meat starts to shred away from the bones when using a fork.
4. Lightly brush the barbecue sauce over the ribs & place back on the grill for 15 minutes to glaze.
Enjoy with a glass of Guinness Original.
