Winter Vegetable Soup
Serves 4
Preparation time: 10-15 minutes
Soaking time: 8-12 hours or overnight
Cooking time: 50 minutes
Ingredients:
100g Great Scot Scotch Broth Mix, soaked and drained
1 tbsp vegetable oil
1 medium onion, chopped
2 medium parsnips, chopped
2 medium carrots, chopped
1 x 400g can chopped tomatoes
1 tsp dried mixed herbs
1 litre vegetable stock, hot
1/4 savoy cabbage, thinly sliced
2 tsp cornflour
2 tsp water
Method:
1. Boil the soaked scotch broth mix for 10 minutes and drain.
2. Heat the oil in a pan and cook the onion, parsnips and carrots for 2-3 minutes.
3. Add the broth mix, tomatoes, herbs and stock, bring to the boil and then cover and simmer for 40 minutes until the vegetables and broth mix have softened.
4. Add the cabbage and cook for 50-10 minutes. Mix the cornflour into the water until smooth and then stir into the soup. Cook for a further 5 minutes and serve with crusty bread.

Cooking Guidelines

Hob - From Ambient. 1. Soak 100g of scotch broth mix in 500ml cold water for 8-12 hrs.
2. Drain, rinse and place into a large saucepan with 500ml of water.
3. Boil for 10 minutes, then simmer for 40 minutes, until the broth mix has softened but is slightly firm to the bite.
4. Drain, rinse and use.

Preparation And Usage

Recipe idea - Scotch Broth
Ingredients: (Serves 8)
250g Great Scot Broth mix
1 Large Onion, diced
1 Large Leek, sliced
3 Turnips, diced
1 Swede, diced
3 Carrots, sliced
1kg Neck of Mutton or Lamb
3.5lt Vegetable Stock
2 tbsp Fresh Parsley, chopped
Salt & Black Pepper

Method...
1. Soak the broth mix to the on pack instructions.
2 Add the onion, leek, turnips, swede, carrots, mutton or lamb & vegetable stock to a large saucepan over a high heat & bring to the boil. Skim off any fat from the surface of the broth with a slotted spoon.
3. Reduce the heat & simmer for 30 minutes, add the pre-soaked broth mix & simmer for 70 minutes, until the meat is tender & falls of the bones. Remove the bones & discard.
4. Add the parsley, season to taste & serve.
