Vinification Details
The fruit was destemmed and gently pressed prior to a 48 hour cold soak at 12°C to extract soft tannins and primary, bright flavours. Fermentation was at 25°C and the cap was continuously pumped over to avoid over extraction. 20% of the wine spent 9-12 months in 5 year old large oak casks and the remaining wine was aged in a mixture of concrete and stainless steel tanks.
