Chocolate Volcano Cupcake Mix
Let's Get Baking
1 Preheat the oven to 230°C/210°C Fan/ Gas mark 7 approximately 10 minutes before your bakes are ready to go in the oven, and place 6 muffin cases into a muffin tray. If you don't have a muffin tray, use a flat baking tray and two baking cases per muffin (one inside the other), so they hold their shape. Take care when using the oven.
2 Melt 80g butter (or margarine) gradually in a heatproof bowl either in a microwave on medium power for bursts of 10 seconds, or in a pan over a low heat. Take care using the microwave or hob.
3 Mix in a bowl the baking mix, melted butter (or melted margarine) and the eggs using an electric mixer or a wooden spoon until combined. Take care using the electric mixer.
4 Evenly distribute the mixture into the 6 muffin cases. Make sure to scrape the bowl clean. If you leave a lot of batter in the bowl, the volcano cakes might be too small and will not have a melting lava middle.
5 Bake in the centre of the oven for 8-9 minutes. You can tell they're baked if the edges seem firm to touch, but the centre is still soft. Take care when using the oven.
6 Remove from the oven and leave to cool for 10 minutes in the tray. The centre of the cupcakes may sink a little, but that's okay! Take care when handling the tray as it will be hot.
7 Prepare your icing by adding 3 teaspoons of water to the icing mixture and watch it magically turn into red lava! If it seems too thick, add a further teaspoon of water.
8 Remove the volcano cakes from the muffin tray and turn them upside down onto a plate. Carefully peel off the muffin cases. Take care handling the cakes as they will still be warm.
9 Pour 2 teaspoons of red icing over each volcano cake, then cut into the cake to release the tasty chocolate lava! Enjoy your volcano cakes, they're best when warm. Serve & enjoy!
