Recipes
Fresh pasta dough (serves 2-3)
160g Doves Farm organic pasta & pizza flour
Pinch of fine salt
2 eggs
Flour, for dusting
1. Put the flour and salt into a mixing bowl, stir to combine.
2. Make a depression in the middle of the flour.
3. Break the eggs into the middle and beat them, allowing a little flour to be incorporated each time you stir.
4. Continue stirring as the flour mixes in, eventually forming a dough.
5. Gather the dough together and knead it for 100 presses to make a smooth ball of dough, adding a little flour only if needed.
6. Cover and leave the dough to rest for 15 minutes before rolling out.

Basic pizza dough (makes 1 pizza base)
150g Doves Farm organic pasta & pizza flour
1/2 tsp Doves Farm quick yeast
1/4 tsp Salt
100ml Tepid water
1 tsp Olive oil
1. Put the flour, yeast, and salt into a large bowl and blend them together.
2. Stir in the water, and when everything looks craggy and lumpy, stir in the oil.
3. Using your hands gather everything together into a doughy mass.
4. Knead the dough in the bowl for 100 presses.
5. Invert another bowl over the top and leave in a warm place for about an hour until the dough has doubled in size.
6. Knead the dough for another 100 presses.
7. Gently roll and stretch the dough into a 30cm/12"circle and lay on a baking tray, dusted with flour, then add your choice of toppings.
8. Bake at 220°C, fan 200°C, 425°F, gas 7 for 15-20 minutes.
