Cour Rastignac is a brand belonging to Jules Lebegue, which dates back to 1828. It is one of the oldest negoce and vineyard owners in Bordeaux. Having been founded in the Medoc its home is now on right bank of St Emilion.

Vinification Details

Merlot: Cold pre-fermentary maceration during 48 hours. Fermentation begins by gradual rise in temperature of the must. Two releases are made In the beginning of fermentation. In middle and end of fermentation, gentle extractions are preferred up to two pumping daily. Cabernet Sauvignon: a 21-day hot fermentation is done. The temperature of wine is constant at 26°C, in order to preserve fruity aromas, maintaining structure and intensity of this variety.
