Atora Christmas Pudding

100g (4oz) Atora original beef suet, 100g (4oz) mcdougalls or be-ro self raising flour, 150g (60z) raisins, 150g (6oz) sultanas, 100g (4oz) fresh breadcrumbs, 75g (30z) dark brown sugar, 50g (20z) chopped almonds, 1/2 tsp mixed spice, 1/2 tsp salt, 1 small apple, peeled, cored and chopped, 2 medium eggs, 75ml (3floz) whole milk, 50ml (2floz) brandy or sherry.
1. Grease and line a 1.2 litre (2 pint) pudding basin, placing a small piece of parchment at the bottom to prevent sticking.
2. In a large bowl mix all the dry ingredients and apple together.
3. Beat the egg, milk and brandy, pour into the dry ingredients and mix well.
4. Spoon the mixture into the prepared pudding basin, cover with parchment paper and foil and steam for 8 hours.
5. When cooked allow to cool completely then replace the parchment and foil covering for a fresh one and store in a cool dry place.
6. To reheat, boil for 2 hours until piping hot. Serve with brandy or rum butter or brandy sauce

Preparation And Usage
Atora Dumplings

Pinch of salt
Pinch of white pepper
1 tsp dried mixed herbs 70ml (4tbsp) cold water 60g cold
Atora beef suet
1. In a bowl, mix the flour, salt, pepper and herbs with the water to make a wet dough. Add the cold suet and gently mix through the dough, do not over mix.
2. Divide the dough into 8 pieces and gently shape into balls with floured hands.
3. Place on the top of a simmering stew or casserole. Cover with a tight fitting lid and cook for 20 minutes. Serve piping hot.
