Preparation And Usage
Just add 350g sweet potato or protein of choice, 1 red and 1 yellow pepper, 400ml light coconut milk, 100g green beans.
Preparation 2-3 people, 15 mins.
Ingredients:
- 90g Pepperpot flavour bomb
- 350g diced sweet potato
- 1 red pepper diced
- 1 yellow pepper diced
- 1x 400ml tin light coconut milk
- 100g green beans cut in half
- Fresh lime, for squeezing
Preparation:
1 Heat 1tbs olive oil in a large pan on a medium-high heat, add the sweet potato and peppers and cook for 2-3 minutes.
2 Add the paste and stir. Add the coconut milk, cover and simmer for 5-6 minutes until the potato is beginning to soften.
3 Add the green beans cover and simmer for 4 minutes. Add a good squeeze of fresh lime juice, stir and serve.
Please ensure food is cooked until piping hot. These instructions are guidelines only.
Serve with rice or Ainsley couscous
