Jamaican Curried Lamb
Ingredients
- 1 sachet Caribbean Curry Seasoning
- 600g lamb leg, diced
- 1 x 400g tin chopped tomatoes
- 400ml beef stock
- 1white onion, diced
- 40g root ginger, finely chopped
- 4 cloves garlic, finely chopped
- 3 tbsp vegetable oil
Preparation
3 tbsp vegetable oil
1 In a saucepan heat the oil & fry the lamb for 2 mins.
2 Reduce heat, add the onions & cook with a lid on for 5 mins.
3 Add the ginger, garlic, curry seasoning, stock & tomatoes, stir well, bring to a simmer & cook for 45 mins with a lid on.
4 Remove the lid & cook for a further 15 mins until the sauce has thickened.
Serve with Ainsley Rice.
Please ensure food is cooked until piping hot.
