Because most varieties of cassava contain toxins that must be eradicated before they can be eaten, cassava is generally not eaten raw. Fresh cassava is processed into Gari just a few days after harvest otherwise it is no longer suitable for consumption. Gari is usually a popular accompaniment to a vegetable or fish stew.

Ingredients: 375g Africa's Finest Gari; 125ml vegetable oil; 3 medium onions, chopped; 2 red chillies, seeded and finely chopped; 4 tomatoes, blanched, peeled and finely diced; 15g tomato paste; 125ml water; salt and ground black pepper to taste; 1 egg, scrambled in oil without milk; garnish: lettuce leaves; 2 tomatoes, finely diced
Preparation: Sprinkle the Africa's Finest Gari with enough water to moisten. Cover and leave to stand for 10-15 minutes. In a large saucepan, heat the oil. Simmer the onions and the chilli until the onions are light brown. Add the tomatoes and simmer for two minutes. Add the tomato paste, water, salt and ground black pepper. Continue to simmer for 4-5 minutes. Fluff the Africa's Finest Gari with a fork. Add it and the scrambled egg to the onion mixture. Blend until the mixture achieves a pink colour. Serve on lettuce leaves and top with diced tomatoes.
