Red Tofu Curry

Delicious red curry made with tofu!


Instructions

  1. 1 Heat the oil in a pan on a medium heat, then add the tofu for about 5 minutes.


  2. 2 Combine all the ingredients including 2 cups of water in a slow cooker and mix.


  3. 3 Cover and cook on high for 4 hours.


  4. 4 Serve with rice, sprinkle a handful of spring onion on top and season to taste.


Ingredients

  • 2 tsp Stir Fry Oil
  • 1 Tofu, cut into cubes
  • 3 cups Carrots, diced
  • 2 cups Potatoes, peeled and diced
  • 6 cloves Garlic, miced
  • ½ piece Fresh Ginger, peeled and diced small
  • 1 cup Coconut Milk
  • 1½ tbsps Red Curry Paste
  • ½ cube Vegetable Stock Cube
  • 300g Brown Rice, for serving
  • 1 handful Spring Onions
