Toffee Banana Split

A deliciously hot, sweet and gooey dessert. The vanilla ice cream cuts through the rich toffee sauce giving a delightful contrast of flavours.

    Pre-heat oven to 180°C (160° Fan oven).

    To make the candied almonds, place the almonds and honey on a baking tray lined with non-stick baking paper and drizzle with honey. Bake until bubbling or golden. Allow to cool, break into pieces and set aside.

    Place the bananas on a metal tray and sprinkle with the caster sugar. Place under a hot grill and cook until caramelised.

    Divide the bananas between plates and top with scoops of vanilla ice-cream. Drizzle with the toffee sauce and sprinkle with the candied almonds to serve.


  • 4 medium bananas, halved lengthways. Leave skin and stem on.
  • 80g caster sugar
  • 1 vanilla ice cream
  • 1 toffee sauce
  • 80g flaked almonds
  • 4 tbsp runny honey
