Mac and Cheese with Bacon

Use your leftover cheese to create something special!

Prepare Ahead

You will need 200g of leftover cheese. It can be cheddar, blue cheese, camembert or goats cheese, anything you like!

    Heat your 190C/ 170C/ Gas 5. Bring a large pan of salted water to the boil and cook the pasta until al dente. Drain well and rinse with cold water until cool. Set aside until needed.

    Meanwhile, make the b├ęchamel sauce. Make a roux by melting the butter in a pan, add the flour and stir well for 3-4 minutes or until the flour begins to turn a pale golden colour. Whisk in the milk gradually to avoid lumps and continue whisking over the heat until the sauce thickens. Stir in the nutmeg, worcestershire sauce, 200g of leftover cheese and spinach. Season and set aside.

    Heat a medium pan over a high heat, add the oil and cook the onion until softened. Add the bacon and cook until it turns crispy, then add the garlic and cook for a further 2 minutes.

    Mix the pasta with the b├ęchamel and place in a large casserole dish. Sprinkle over the bacon mix, the parmesan and the breadcrumbs. Bake for 30 minutes or until bubbling, golden and piping hot throughout.

  • 60g butter
  • 3 heaped tbsp flour
  • 1 l mik
  • 1 pinch ground nutmeg
  • 1 tsp worcestershire sauce
  • 100g baby spinach
  • 1 tblspn olive oil
  • 1 onion
  • 4 rashers smoked bacon
  • 2 cloves garlic
  • 50g parmesan
  • 1 slice sourdough bread
