Blackberry Bakewell Cake

Blackberry Bakewell Cake

Legend has it the Bakewell cake was invented accidentally, when the almonds, sugar and eggs ended up as a layer of custard over the jam instead of being used to enrich the pastry, as intended. What a delicious accident...

  1. 1

Preheat the oven to 180ºC/160ºC fan/Gas 4. Grease and line a 20cm round loose-based cake tin with baking parchment.

  2. 2

In a bowl, cream the butter and sugar together until fluffy. Add the eggs, almond extract, ground almonds and flour and mix well.

  3. 3

Spread the mixture evenly in the prepared tin. Scatter blackberries over the top then sprinkle over the flaked almonds and sugar.

  4. 4

Bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean.
