Melon and Parma Ham Salad

Looking for a quick and easy salad? Light and tasty, this dish only takes minutes to prepare and makes the perfect starter or lunch on a summer’s day.


Instructions

    Cut 1 cantaloupe melon, skinned and deseeded, into wedges.

    Place on a large plate with 4 handfuls fresh rocket, 2 mozzarella balls, torn in quarters, and 4 slices Parma ham.

    When ready to serve, drizzle with 2 tbsp balsamic vinegar, 3 tbsp extra virgin olive oil and season with black pepper.
