Cut 1 cantaloupe melon, skinned and deseeded, into wedges.

Place on a large plate with 4 handfuls fresh rocket, 2 mozzarella balls, torn in quarters, and 4 slices Parma ham.

When ready to serve, drizzle with 2 tbsp balsamic vinegar, 3 tbsp extra virgin olive oil and season with black pepper.
