Vegetable and Bean Soup
A simple but tasty soup packed with flavour.
- 1 Onion
- 2 Carrots
- 2 handfuls Spinach
- 1 tin Cannellini Beans, drained
- ½ Vegetable Stock, make 2 pints
- 1 sprig Thyme
- 2 Celery Stalks
- 2 Garlic Cloves
Total time required
- Cooking time:
- Chop the vegetables and sweat them along with the garlic, sage and thyme.
- Mix the stock with boiling water and add to the pot.
- Add the tin of tomatoes and cook for a few minutes.
- Add the beans and spinach and then serve.
