Red Pepper, Feta and Basil Pancakes
A fresh, savoury Mediterranean-style twist for Pancake Day... or everyday. Follow our basic pancake mix recipe first, then add the topping.

Ingredients
- 2 red peppers, halved
- 2 tbsp olive oil
- 1 red onion, sliced
- 200g feta cheese, crumbled
- 20 black olives, pitted
- 15g fresh basil leaves

Instructions
- Put the pepper halves skin-side up on a baking tray. Grill for 10 minutes to blacken the skins.
- Immediately pop them into a polythene bag and leave to stand for 10 minutes so they ‘sweat’. Then peel the skins off and slice into thin strips.
- Heat 1 tbsp of the olive oil in a pan and gently fry the onion until it softens. Toss the pepper, feta and olives with the onion, then divide over the top of 4 pancakes. Scatter with basil leaves, drizzle over the remaining oil and season to taste.
