Ingredients
- 225g chorizo
- 1 onion
- 2 cloves garlic
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 1 tblspn tomato purée
- 400g chopped tomato

Prepare Ahead
You will need 500g of leftover potatoes.
Instructions
- Warm a large non-stick frying pan over a medium heat. Add the sliced chorizo and cook for 2 minutes, then stir in the onion and cook for another 3-4 minutes, until almost softened. Add the potatoes and cook for 3 minutes, before stirring in the garlic, spices, tomato purée; cook for a minute. Pour in the chopped tomatoes, stir well, then bring to the boil. Simmer for 4-5 minutes until thickened.
- Serve as a side dish or with other tapas-style selections.
